Blackcurrant Yogurt and Chia Seed Smoothie

This creamy Blackcurrant smoothie is the perfect refreshment on a hot summers day!
Ingredients
The Smoothie
200g blackcurrants
1 tbsp. chia seeds
6 mint leaves
2 tbsp. honey
Method
Place 100g of the blackcurrants into a small pan, add one tbsp. of honey, and gently warm through. This is just to slightly sweeten the blackcurrants.
Once done, add them to the bottom of your glasses to go cool in readiness for the smoothie to be poured over.
Put the yogurt into a blender with the remaining blackcurrants, 4 of the mint leaves, one tbsp. of honey, and the chia seeds. Blend for 20-30 seconds until nicely mixed up
Pour gently over the compote of blackcurrants in the bottom of the glass and garnish with a little sprinkle of chia seeds and shredded mint leaves.
Serve immediately
