Elderflower Macerated Berries

Berries and elderflower are a match made in heaven. Pair with a dollop of creamy yogurt for a perfect spring pud.
Ingredients
1 punnet of blueberries
1 punnet of strawberries
1 punnet of blackberries
1 punnet of raspberries
1 tablespoon of caster sugar
Juice of 1 lemon
100ml elderflower cordial
A few sprigs of fresh herbs such as mint, lemon balm, basil or lemon verbena
Method
Remove the husk from the strawberries according to their size and place in a mixing bowl. Cut the blackberries in half and add to the strawberries along with the raspberries and blueberries.
If using fresh herbs, pick the leaves off with a sharp knife and add to the berries. Add the elderflower cordial and gently mix. Allow to macerate for at least 1 hour.
Tips: You could substitute the fresh berries for frozen berries, and even experiment with different flavoured cordials such as blackcurrant, ginger or lemon depending on your tastebuds.
